Two grape reception lines, each equipped with sorting tables, allow harvest dates to be controlled according to the optimum ripeness of each plot.
Our winery consists of temperature-controlled concrete vats of various capacities, allowing us to harvest and vinify small, homogeneous batches. During vinification, we choose to respect the personality of each plot selection by working with precision on extraction. Fermentation times range from fifteen days to one month, depending on the potential of each batch.
